Vegan Wholemeal Diet Coconut Fantasy Cake :)
Hello dear ones,
Here is presenting a dessert that can put every non vegan dessert to shame...
loaded with the sweetness of organic Jaggery (which is rich in Iron BTW)
It teases you with the coconut crunch inside every bite
and bound together with the goodness of chia seeds & coconut oil
topped gracefully with roasted melon seeds (also v healthy)
Without further ado, please give it up for :
"Vegan Wholemeal Coconut Fantasy Cake"
Yes you got it right, no butter, no milk, no eggs, no refined flour, no sugar of any sort...& yet it has smashed the expectations of dessert lovers...
Ingredients
1cup whole meal flour
1.25 table spoon Chia seeds soaked n made Into paste
1 spoon baking powder
3/4 cup organic jaggery
3/4 cup freshly desiccated coconut (since ur not using milk, the fresh coconut milk makes it moist n yummy)
1/2cup cold pressed virgin coconut oil
Cardamom & cinnamon powder 1/2 tea spoon together (i haven’t used vanilla Essence, somehow these spices added a good flavour)
After the batter is made I’ve added melon seeds while setting up to steam cook.(u can choose ur nuts 😂
Preparation
Run the whole meal four n baking powder through the sieve 5-6 times.
Pre Heat the oven at 125 degrees
After blending in all The wet ingredients, put them all together in a blender and blend until a uniform paste.
Set it in a tray for cake or muffins
Bake it at 125 for 20mins, cool & enjoy.
Happily treat yourself or your kids- whom you want to protect from SUGARRRRR...
Since all the ingredients are organic n the sweet comes from jaggery it’s a fantastic source of iron without settling on your waist.
Team it with vanilla ice cream for creating a flawless dessert 😇
