Salads for Kids...


Hello Dear ones,

There is something about festive seasons, irrespective of the country...
The streets come to life,
there is so much excitement in air,
the wind blows with a certain rhythm,
the music from the shops is infectious...

A beautiful wisdom quote thats explains this further :
"Every celebration is followed by tiredness, as the 5 senses have had an overdose, hence meditation before and after celebrations, refreshes us, rejuvenates us and keeps us centred".

Sharing a Yummy Salad that my son loves and apart form being high on health its very tasty, you can use this for detoxing or just for general well being and its very easy to make:
Ingredients:

Green Moong
Carrots
Onions
Any salad veggies that you like
Fresh lime
Coriander leaves freshly cut

Preparation :
-Soak one cup green Moong overnight
-To the boiling water add a cup full of soaked moong,
leave it in the boiling water for 7-10mins
- drain the water into another container (I love to reuse)
-In the same water you can add your salad veggies, that you can grate or cut using discretion and drain the water immediately.
-Take a pan and on low flame - after heating it add a tea spoon of A2Ghee/ coconut oil/ or oil thats locally grown in the region you live, (ensure its not refined -another post on refined oils to follow)
when the ghee/ oil has heated, add 2 pinches mustard seeds & 2 pinches cumin seeds, as they start to splatter, add in the onions, curry leaves and moong.

-After switching the flame off, you can add roasted cumin powder+salt.

After transferring it to a bowl you can add in your veggies.
Its good to ensure that your veggies are more than 1/3 the quantity of your moong.
Squeeze in some fresh lime juice & garnish with coriander leaves (well in my pic above you won't find coriander as I ran out of it:)
Have it as a snack, my son loves to have it with Dosa or Millet roots (Ragi Jawar Besan & atta :Recipe to follow)
He makes wraps himself and enjoys it throughly.

Diet Salad : Well you can also have this with a soup incase you are dieting, thats a complete meal too.
For the diet salad you can totally avoid garnishing it with oil or ghee and increase your raw veggie content equal to boiled moong.
