MIX & MASH SPICY WRAP/ SANDWICH - Healthy Breakfast

A quick Fix and complete breakfast package is what Roti wraps/ sandwiches are.

There are 3 components to it, veggies in raw form & boiled form
Chutney or sauce : for health benefits, to add taste & bring the flavours together
Wrap / Sandwich : multigrain or whole meal (will share recipe in upcoming posts)

STEP 1: Get your MASH
I used sweet potato
Add a pinch of rock salt + a herb of your choice + pepper / chaat masala (an indian concoction of spices extremely beneficial to aide digestion & remove excess gas)

STEP 2: Get your RAW VEGGIES
I used cucumber, feel free to choose a veggie that tastes great in raw form.

STEP 3: make a SAUCE/CHUTNEY
Ive made green coriander chutney:

  • Coriander 2 t-spoons cleaned and chopped tea spoon
  • Tomato - half finely chopped
  • 1 garlic pod
  • pinch of roasted Cumin powder
  • salt to taste
  • 1 small green chilli (if your making for kids pls avoid, you can replace it with 1/5 cut capsicum)
  • grind all the above ingredients in a blender
  • Apply the mashed veggie, as base on the buttered sandwich or wrap, top it up with the raw veggie and you are good to go.
  • a pinch of jaggery.
Notes
  1. You can use a veggie of your choice to mash - sweet potage/ potato/ pumpkin/ beets/ carrot or mix few veggies together
  2. Sweet potatoes are a rich source of fibre as well as containing a good array of vitamins and minerals including iron, calcium, selenium, and they're a good source of most of our B vitamins and vitamin C. One of the key nutritional benefits of sweet potato is that they're high in an antioxidant known as beta-carotene, which converts to vitamin A once consumed.
  3. Capsicum is good to help calcium absorption, I use it for most of my sons sauces, tastes good too.
  4. Coriander leaves extremely beneficial in detoxing your kidneys, when cleaned & consumed in raw form.
  5. You can add a t-spoonful of cleaned and chopped coriander to a cup of boiling water, boil for 2mins, filter & drink the herbal tea.
  6. you can also add 1/4 cut onion to the chutney / sauce if you like.

This Wrap/sandwich can be had at breakfast/ for tea or you can make a dinner out it along with soup.
its wholesome, healthy, easy to make and is loaded with the richness of all veggie bits & minerals.

Enjoy this recipe and do share how it turned out.
Love
