Sharing a few desserts :
1. Modak / steamed sweet dumplings (makes 11)
Ingredients :
Rice base :1 cup rice roasted and grinded
2.25 cups water
1 spoon ghee
Filling : one cup freshly desiccated coconut
4 table spoons powdered jaggery
one pinch cardamom powder
Preparation
Boil water in a pan, once it starts boiling, add the ghee
and the rice flour gradually, to avoid forming lumps
keep staring this for 10mins till it firms up.Make small round balls & flatten into a round shape
For filling : in a heated pan add powdered jaggery + desiccated coconut + pinch of cardamon
and keep staring for 3-4 mins on flame. cool the filling
Flaten the rice balls and fill it in
to be steamed for 7mins in a steamer or in a pressure cooker (without the whistle)
2. Modak : Savory Dumplings (makes 11)
Ingredients :
Rice base :1 cup rice roasted and grinded
2.25 cups water
1 spoon ghee
1/3 tea spoon roasted Cumin powder
1/3 tea spoon roasted Ajwain ? bishops weed seeds
pinch of salt
Preparation:
Boil water in a pan, once it starts boiling, add the ghee
and the rice flour gradually, to avoid forming lumps and then add in the cumin powder, the ajwain and salt
keep staring this for 10mins till it firms up.
Make small round balls & shape them into modaks or you can keep them round.
3. No Ghee, fuss-free Kheer
Ingredients :
2 table spoons roasted atta
250 ml boiled milk
1 table spoon full of roasted and ground cashews
pinch of Cardamon, roasted and powdered (with skin)
2 drops vanilla essence
2 spoons raw sugar (or a sweetener of your choice)
Preparation:
Blend the milk and atta to avoid forming lumps
Heat a pan and add the blended liquid in to it add the roasted dry fruits + pinch of cardamom and raw sugar & vanilla essence.
keep stirring it constantly for max 7-9mins to avoid forming lumps.
Serve hot or refrigerate and serve.
Vegan Version:
replace milk with
- fistful of Almonds soaked overnight : remove the skin and blend it with raw sugar OR
- Fistful of Cashews soaked in water for 2 hours and blended with raw sugar OR
- one freshly desiccated coconut blended with warm water and a few cashews.
