VEGAN Cake 👌 (Eggless & Dairy free)
Weekends are the best time to cook with family and bond over good food. Be it brunch, lunch, tea time or dinner, a special meal in all cusines needs a dessert. So sharing an interesting recipe & its ORIGINS...
I accidentally made this tea time, limited ingredients cake, after midway through a panic attack realising that i had to make peace with the ingredients (or lack of them) and my situation of 'lack of ingredients', so that I can find a solution...so here goes my "Accept people and Situations as they are" cake or HP 2nd Sutra Cake :)
Vegan cake
Note 1.If u want to make it Gluten free u can replace whole meal with Buckwheat but
2.buckwheat needs more preheating & baking for a bit longer than u normally would
Banana Walnut Vegan cake:
1cup whole meal flour / buckwheat
3/4 cup powdered jaggery
1.5 table spoon baking powder
1 table spoon chia seeds soaked for min 4 hrs
Vanilla Essence 6drops
2/3 cup virgin coconut oil
Roasted & powdered walnuts ( you can choose any dry fruits )
Add all the liquid stuff in blender
Vanilla essence 6 drops+Ripe banana 2+roasted walnuts + powdered jaggery & blend it
Add the baking powder to flour & sieve it 6-7 times so that it evens out
Add it all together in a food processor & burr it till you can see it pluff
Preheat oven for 20mins at 140 & bake the cake at 125 for 45mins
Cool and serve it with a scoop of ice cream of your choice or fruit or jelly or custard of your choice.
You can get creative with the serving and even add your favourite clusters or cereal or muesli for toppings.
